Your overripe bananas don't look good, but they taste good

Overripe bananas are not just for making banana bread.

We all do it. We buy a bunch of bananas with the intention of eating them throughout the week and after the week has passed, those bananas were left to ripen, and ripen, and ripen.

Overripe bananas are soft, look kind of gross, and when you see them you might tell yourself that you’ll make them into a nice banana bread if you get around to it, but you never do.

If you are that person, this recipe is for you. This recipe is not only quicker and easier than making banana bread – so you have to give it a try!

Naturally sweet with no added sugar and gluten-free

Overripe bananas are sweet! They are so sweet in fact that you don’t need any maple syrup or any sugar at all to sweeten these. Unlike a fresh, and not overripe banana, the flavor of these are more sweet-savory.

These banana crepes are a great base for adding your favorite toppings. I like to pair these banana crepes with fresh fruit, coconut shavings, and nut butter.

Quick, easy & delicious

These are so simple to make that you should only feel bad if you DON’T try this recipe when you are looking at your overripe bananas wondering what to do with them. I make these banana crepes for breakfast but this would make a great snack for the kids, a dessert, or just a quick snack for yourself.

Easily adjust the recipe for more servings

The ratio of this recipe is a simple 1:2. One banana to two eggs.

If you only had one overripe banana, you would use two eggs. If you wanted to use 3 overripe bananas, you would use 6 eggs etc.

  • 1 Mixing bowl
  • 1 Frying pan
  • 1 Fork
  • 1 Spatula


  • 2 Overripe bananas
  • 4 Eggs
  • 1 tsp Vanilla extract
  • 1 tsp Cinnamon
  • Butter or coconut oil to grease the pan technically another ingredient, but it's not going IN your crepes


  • Peel and add overripe bananas to a mixing bowl and mash with a fork until there are almost no lumps. Lumps are fine, but no lumps is best!
  • Add eggs, vanilla, and cinnamon then whisk it all together into a smooth batter.
  • Heat up a pan on medium/low heat and grease your frying pan with butter or coconut oil.
  • Pour the batter to the size crepes you want. Crepes are really thin! The smaller you make the crepes the easier it will be to flip them.
  • That's it! Enjoy. These crepes are naturally very sweet from the banana so you don't need to add any maple syrup (but you can if you want!). Add fresh strawberries, coconut shavings, or whatever else you like.
