An easy BLW food

If you don’t know what BLW stands for I didn’t either until a few months ago. Someone told me that was what I was doing by letting my daughter learn to feed herself. It’s nothing fancy, it just means “Baby Led Weaning” and it’s what I just said: you let your baby feed themselves as they “wean” from milk as their primary food source and start exploring solid foods.

Finding small, easy to chew, finger friendly food that isn’t a total mess maker is not easy as it turns out. Eggs however are a great carrier for other foods like cheese, meat, and vegetables. My daughter has become a little picky since starting her solid food journey and these broccoli cheddar egg bites are my easy, go-to breakfast for her when I need to slip some veggies into her meals.

Even though I started making these for my daughter, they have become my breakfast as well.

Not a looker

They don't look cute but they taste good

Listen, not every meal you make for your children is going to be Instagram worthy BUT NO ONE CARES. I know I tend to pick a recipe first on how the pictures look, second on the reviews, and third if I even have the ingredients to make it. You likely have the ingredients to make these, they will not be perfect little circles of egg and it doesn’t matter because they are quick, easy, and delicious.

I like to use broccoli and cheddar cheese but I will use whatever cheese I have in the fridge and it always turns out good. If you don’t have broccoli, but you do have cheese, that’s fine too. You could do spinach, zucchini, or any other vegetable you like. You make these however you want to make them.

Broccoli Cheddar Egg Bites

Finding food your child won't throw on the floor in disapproval can be challenging and sometimes frustrating. You can feed them cereal and pasta, but you know you'd feel better (and they would too) if you made them something more nutritious. My daughter will only eat eggs if I make her these little egg bites. They're perfect for little hands and easy for babies to feed themselves. I also enjoy eating them, so everybody wins.

Equipment

  • Mixing bowl a small soup or cereal bowl will do just fine
  • Pan we cook with cast iron

Ingredients

  • 2 eggs whisked
  • 1 small handful broccoli just the tops diced really small
  • 1/4 cup cheese we like cheddar, parmesan, and monterey jack

Seasoning (optional)

  • 1 tsp garlic powder
  • salt to taste

Instructions

  • Whisk two eggs in a bowl. You can add butter or oil to your pan and let it heat up while you do this.
  • Chop just the heads of the broccoli up really really small - it doesn't have to be perfect.
  • Add seasoning, broccoli and shredded cheese to the egg bowl and whisk it all together.
  • Pour 2-4 inch circles of the mixture into the pan and cook for about 1-2 minutes on each side. Your circles might not be perfect and that's ok, it doesn't matter. They also might turn a little brown (from the cheese) but they aren't burnt!
